Alchemist Beer Lab South Beach Singapore: Chilling out with Craft Beer and Nachos!

Alchemist Beer Lab was where we visited during our recent staycation at Fairmont Singapore. From the team behind microbrewery Little Island Brewing Co., Alchemist Beer Lab serves up great tasting craft beers accompanied by unique tapas. As Alchemist Beer Lab is located at South Beach Tower, it was just a couple of minute’s walk – perfect for our little trip out during our staycation!

Alchemist Beer Lab Review – What We Had

Before we arrived, we already had an idea of what we wanted to order. This time, we went with the Vaca Frita (“Fried Cow”) Nachos ($18) as well as Whiter Shade of Pale ($12) and Finn’s Sling ($14)

The Vaca Frita Nachos, as the name suggests is an unique nachos with thinly sliced pieces of fried beef. Besides the usual suspects of guacamole, cheese and jalapeno, there’s fragrance from the sliced garlic and fried beef. While it was delicious, it was super dry. The deep fried beef, garlic and nachos makes one want to go for another big mouthful of beer to wash down together. Perhaps, it was intended for the dish to be dry-ish to encourage more beer guzzling. Of course, our favourite nachos of all time, is still Macho Nachos from El Vez Philadelphia!

As for the drinks, we had Whiter Shade of Pale (pale ale) and Finn’s Sling Cocktail. Both were delicious! We first had Whiter Shade of Pale from Little Island Brewery at Changi and have been a fan since. On the surface, the pale ale looks, well, pale. But it still retains the flavour of a pale ale, with a refreshing citrusy twist. As for Finn’s Sling, it is made with gin, passion fruit soda, lillet blanc, mint and orange bitters. A beautifully crafted cocktail that is delicious and refreshing. Both went well with the nachos that we ordered! 😋

Due to the ongoing pandemic, there hasn’t been many patrons to South Beach Tower. During our visit, there were only 5 tables filled, on a Sunday evening. That definitely didn’t bode well for the business. For us, it was great for playing our latest game, Rummikub! 🤭 If you’re looking for a great place to chill out in the town area, we’d definitely recommend visiting Alchemist Beer Lab where great crafted beers and cocktails await!
