The Bird Southern Table and Bar is the latest addition to Marina Bay Sands signature restaurants. With award winning John Kunkel helming its kitchen, the restaurant benefits from his Southern roots where food and spirit meet. Not to mention, the 100 year-old Lewellyn’s Fine Fried Chicken that piques the interest of even the most picky taste buds. Thanks to the great folks at Chrysler, we got the opportunity to visit the Bird Southern Table and Bar.

At the entrance of the Bird Southern Table and Bar, you definitely can’t miss the extensive selection of cocktails and spirits. With its Southern roots, Bourbon definitely features prominently. The Bourbon feature wall says it all. The bar of the Bird is a great area to catch up with friends and enjoy some of the best cocktails in Marina Bay Sands.
With 95% of bourbon made in Kentucky, the Bird also has a bar which serves a huge spread of bourbon specially imported from USA. Their special infusion of Bourbon selection is found only in this restaurant!
Inside the Bird Marina Bay Sands
The restaurant is nicely decorated with solid woods for tables, chairs, ceilings and floors, matched against the white bricked walls. This adds to a nice homely feel. The leather button chair adds to the comfort factor for prolonged sitting, dining and chatting.
At first look, the yellow lights didn’t seem much. But on closer inspection, you’ll the bourbon bottles acting as lamp shades for the soothing yellow lights. This also brings out the flavor of this Southern restaurant.

This time, we got to try out the Prix Fixe Menu at the Bird Southern Table and Bar…
First Course
The Deviled Eggs consists of a paste of egg white, mixed with mayonnaise, dill and Chives; holding up the half boiled egg, topped with the paste and smoked trout roe. It’s a refreshing blend using chilled paste of fresh ingredients , mixed with white hard boiled egg. An amazing fusion of savory tastes, along with the “mouth popping” smoked trout roe.
The Fried Green Tomato BLT consists of a tomato bread crusted as the base, topped with flavored pimento cheese, and a mouth-watering smoked pork belly, smoky tomato jam and frisée pickled lemon vinaigrette. The
combination of crispy base, with cheese, pork belly, jam, and lemon vinaigrette is simply masterful. It leaves a
texture of crunchiness, in the midst of its savory ingredients. Definitely a pleasant surprise for us.
Second course
We enjoyed the Chicken N Watermelon N Waffles. For the 100 year-old recipe, the chicken is soaked in a chicken brine consisting of water and special ingredients for a period of 27 hours. This allows moisture and flavours of the chicken to be locked in. The famous fried chicken goes well with honey hot sauce. The chicken is tender on the inside and moderated crispy on the outside. In addition, the chicken is not so oily, offering a great choice for the health conscious.
The chilled spiced watermelon is cubed and marinated with salt, cayenne, mint and citrus juice. Refreshing for a weather like that of Singapore. Moreover, it brings out the sweetness of the watermelon. This leaves behind a refreshing after taste of peppermint taste with every bite. Yum!
The waffle is freshly made and coasted with vermont sharp cheddar cheese. The bourbon maple syrup (must try!)brings out the taste of the waffle. The syrup has got a tinge of liquor taste because of the bourbon, which goes well with
honey.
For the Macaroni & Cheese, torched shaped pasta is specially chosen to hold up the artisanal
cheeses. The dish is topped with crispy herb crust. Great macaroni and cheese lovers. Tuck in while its hot for the cheesy goodness!
For vegans in our midst, the Butter Lettuce and Grilled Mango Salad offers up a great option. Sweetness of mango is amplified because of its char-grilled method used. The combination of butter lettuce mixed with smoked pecans, red onion, tomato, benne seed vinaigrette makes this a hearty portion of salad!
Creme Brulee lovers alert! Almond orange biscotti with orange gremolata on the crispy topped brûlée provides a perfect rush of flavors and texture. One of the best creme brulee we’ve had!
Another great round up to a perfect meal would be the banana pudding – rum soaked banana cake with fresh bananas as the main ingredients, topped with chantilly cream and vanilla wafers. It’s served chilled and not too sweet leaving a deep banana after taste.
The signature Blackberry Bourbon Lemonade is tart and tangy with just the right amount of sweetness made with Wild Turkey Bourbon, blackberry purée, fresh lemon, cardamom and Angostura Bitters. There is a tinge of sweetness in the cocktail and it’s not too heavy a drink, thus perfect for a boost of the mind…
This is a special drink specially prepared by the bartender. Lime, bacon and ladyfinger suspended on a stick above the glass which heightens the drinking experience. It’s a tad spicy in taste with an after taste of fresh tomatoes.
