About Food Exchange Buffet Novotel Singapore on Stevens
The concept of Food Exchange has several dimensions to it. At the most basic level of this “exchange”, it is a restaurant where friends and families can come together and enjoy each other’s company. This “exchange” is done over great food where Food Exchange’s concept includes a great mix of food from Singapore, Thai, Indian and European cuisine. Lastly, Food Exchange also wants to promote interaction not only among guests but also between chefs and guests. This is why “live” cooking stations are aplenty during dinner buffets at Food Exchange. This time, we saw the noodles, foie gras and risotto live cooking stations. All these “exchanges” typify what Food Exchange stands for and this was shown in the quality and selection of foods at its buffet dinner…
The restaurant has an open concept which creates space in the dining area and also allows guests to see the chefs “live” in action. With the blinds lifted, the open concept also extends to the swimming pool next to the Food Exchange. Here, you’ll also be able to enjoy al fresco dining and relax by the pool as the evening unwinds.
Appetizers Food Exchange Buffet Novotel Singapore
We started off our buffet dinner at Food Exchange at the salad bar which includes fresh leaves, watercress, radicchio, butterhead lettuce, rocket leaves, green and red oak, cherry tomatoes, roasted pumpkin, anchovies, marinated feta cob salad, caesar salad, crudites onion rings. The extensive selection of cheeses includes danish blue, brie, parmesan, emmental and feta cheese in olive oil. Coupled with the sweet and fresh fruits, the appetizers turned out to be a healthy start to the meal 😉
Food Exchange Dinner Buffet Seafood Counter
For dinner buffets, one of the selection that makes or breaks has got to be the seafood counter. At Food Exchange Novotel Singapore, the seafood selection didn’t disappoint. The variety was relatively extensive which included the blue crab, prawns, black bouchon mussel, fresh oysters and cray fish. There were also tuna and salmon sashimi available. The sushi selection included salmon, tuna, unagi, inari, tamago and many others.
Carving Station Food Exchange Buffet Dinner Novotel
As it is also the festive season, the live carving station includes the roasted turkey with filling and cranberry sauce as well as the roasted ham with apple sauce. The roasted beef continues to be the main stay of the carving station of Food Exchange buffet dinner.
Novotel Singapore on Stevens Food Exchange Dinner Hot Food
The hot food selection at Food Exchange Dinner Buffet includes Western (grilled salmon, duck confit), Asian (beef rendang, dim sum) and Indian (tandoori chicken, kebab) cuisine.
Desserts @ Food Exchange Buffet Dinner Novotel Stevens
Desserts included eclair, bread pudding, apple crumble, opera cake as well as selection of ice creams.
What we had at Food Exchange Dinner Buffet
Our favourites from the meats were the duck confit and roasted char siew. Particularly for the char siew, it was tender and glazed with a sweet honey-like taste.
At the live cooking stations, it was Head Chef Janne Ollikainen who was helming the risotto station. It was actually kinda entertaining to see the culinary genius at work. Folding in the risotto skillfully in a repeated process, the result – great tasting risotto that is thoroughly infused with the taste of porcini mushrooms. The foie gras also didnt disappoint. Melt-in-your-mouth, creamy and buttery goodness.
Although we did not find the fried hokkien sotong mee on the day’s buffet selection, the chef were more than happy to cook up this one-person portion for us. Instead of thinly sliced pork, thick roasted pork (烧肉) was used. Simply delicious!
We rounded the dinner buffet at Food Exchange Novotel with a large cup of cafe latte and an assortment of desserts. A perfect finish to a wonderful meal.
