During our visit to Jewel, besides Birds of Paradise Gelato, we also reviewed Shiki Hototogisu Ramen by the Michelin-starred Chef Yamamoto
What to Eat at Shiki Hototogisu Ramen Jewel
Unlike the favoured Tonkotsu ramen (think Ichiran Ramen in Tokyo), the ramen at Shiki Hototogisu is served in a different type of broth – one that is simmered in red sea bream, clams and Japanese dashi. This makes the broth sweet, light and aromatic. This time, we ordered the
Tonkotsu Smoked Pepper Ramen
Black Spicy Ramen
Cold Tofu
Gyoza

The ramen from Shiki Hototogisu Ramen is slightly on the saltish side due to the clam-based broth. We found it interesting but not all that enticing. Nonetheless, the ramen noodles stood out. The home-made noodles, made from stone-milled domestic flours, gave a wonderful texture – different from the usual “run-off-the-mill” ramen. The cold tofu was silky smooth and went really well with the roasted sesame dressing. As for the gyoza, though they were slightly small, it was delicious and juicy within.
All in all, it was a great place to dine but we still prefer the rich, deep-flavoured tonkotsu ramen. If you’ve dined at Shiki Hototogisu Ramen, let us know your thoughts in the comments section below!
Wow, nice review. Will give this a try next time in Jewel
